INGREDIENTS:
6 mini bell peppers
2 cans Wild Planet Skipjack Tuna
1/4 cup Greek yogurt (or mayo)
1 tbsp dijon mustard
1/4 cup onion, finely chopped
1/4 cup celery, finely chopped
Salt and pepper, to taste
3 slices of cheddar cheese, cut into fourths
INSTRUCTIONS
In a bowl, combine tuna, greek yogurt, mustard, onion, celery, and salt & pepper. Mix well. Slice the peppers in half lengthwise. Remove any seeds that may be present. Fill with tuna, and top with cheese. Bake at 350 degrees until cheese has melted, about 10 minutes. Serve or allow to cool and pack to store in the refrigerator.
