Ingredients:
1 can Wild Planet sardines
1/4 cup plain Greek yogurt
1 small garlic clove, grated
1 cup cucumber, peeled and finely diced
1/2 cup diced red pepper
1/2 small red onion, finely diced
2 tbsp chopped fresh dill
2 oz feta, crumbled
2 tbsp lemon juice
2 tbsp olive oil
Salt & pepper to taste
For serving: pita chips, sliced cucumber and bell peppers
In a bowl, add the sardines, shaking off excess oil before adding, and mash lightly.
Add the cucumber, red pepper, red onion, dill, feta, Greek yogurt, lemon juice and olive oil. Mix well to combine.
Add salt and pepper to taste. Let it sit 15–20 minutes so the flavors meld.
Drizzle with olive oil and top with extra herbs.
Serve with pita chips, or sliced vegetables such as cucumber or bell peppers!
